Wow it has been a long time! Have you missed me?!? Our vacation to California for Seanna and my brother's wedding turned into a long break from blogging. I came back with a nasty cold that has taken two weeks so far to get over (and I still have a cough!). So our kitchen has not seen many great meals lately. I have had great intentions but between being so tired and nothing sounding good we have had pretty lame meals.
I am hoping that forcing myself to put together a menu plan will help this week. I don't want to keep dreading the dinner hour every night. Since I still don't feel 100% I am not sure how much of this will actually happen but a plan is the first step.
I hope you had a wonderful Thanksgiving!
Menu Plan Monday
Monday: Dinner at Mom and Dad's (THANK GOODNESS!)
Tuesday: Stir Fry (pineapple, broccoli, turkey, etc.), Cranberry Muffins
Wednesday: Meatloaf, baked sweet potatoes, green beans and sparkling cider to celebrate the Christmas season!

Things are really getting busy here the closer we get to Garrett and Seanna's wedding. Just two weeks away now! I have my final bridesmaid dress fitting this week and a haircut scheduled. Because of the two evening commitments I will be relying a lot on my crock pot this week. I hope everyone had a great weekend!
Dinner
Monday: Mom and Dad's
Tuesday: 20 to 40 Clove Garlic Chicken, mashed potatoes, pumpkin dinner rolls, broccoli. (this is a meal where freezer cooking comes in so usefully! The potatoes and rolls are in the freezer and the chicken will be in the crock pot.)

Thursday: French Dip Sandwich, broccoli, Festive Cranberry-Pineapple Salad
Friday: Pot Roast, fresh bread, broccoli, Risotto, apple strudel for dessert
Saturday: Out to Eat
Sunday: Annual Dinner in a Pumpkin for Halloween!
Breakfast
(I just have to say that my husband, who rarely ever reads my blog, did so last week on the morning he was supposed to get a Monkey Bar for breakfast and said "I didn't get a Monkey Bar today!" I thought it was funny since he really is the only person who knows if he had what I wrote in the plan. I will try to do better this week in sticking to what I plan.)
Monday: Steel Cut Oats
Tuesday: Steel Cut Oats
Wednesday: Pancakes (thanks to planning ahead)
Thursday: Monkey Bar
Friday: Cinnamon Roll
Also on my list this week is to make Pumpkin Coffee Cake. Doesn't that sound super??
Have a great week everyone!

I am having a hard time deciding what to put on this menu plan tonight because I am overwhelmed with the amount of recipes I have in front of me. Does anyone have a really great system for keeping recipes from magazines organized and sorted? I started with a binder then moved into a whole filing box system. My problem with the box is that they are not easily accessible so I don't really think about them. My problem with the binder is that I have pulled so many recipes now that I need multiple volumes to house all my recipes. Please please, please share if you have any ideas.
On another note I made pumpkin bagels this afternoon and they turned out so amazing. I am impressed with myself.
Dinner
Monday: Dinner at Mom and Dad's
Tuesday: Baked Chicken Taquitos (except I am going to use shredded beef from the freezer), canned fruit, Mexican Rice Salad

Friday: Leftover stew, fun fall dessert (I need to take this to a party we are attending)
Saturday: Out to Dinner

Tuesday: Egg Sandwich
Wednesday: Monkey Bar
Thursday: Peanut Butter Baked Oatmeal

This is going to be a a little different week than normal. I only have to plan meals for three days! Can you believe it?!? How easy is that!? I love eating out and having other people cook for me!
We also get our new beef this week! My hubby is going to pick it up tomorrow since he has the day off from work. I have about 3 pieces of last years meat to use up so that is part of my plan for this week.
We went out to the pumpkin patch today with some friends and then spent the evening baking. The products of our labor were not very good (more to come on that later) but we had a blast. That is what matters right??
I hope everyone has a great week!

See more menu plans at I'm an Organizing Junkie.

There are so many great recipes online and in magazine I feel like I always have more things I want to make and try than I do days to try them in. Right now I have an ever growing stack of recipes I have pulled from various places waiting to be made. Does anyone else ever have this problem??
This week I am again trying to use stuff out of my freezer. I want to get it all cleared out before the new beef arrives. I also peeled, sliced, and froze 20 bags of apples yesterday with my mom (which was only a 1/4 of the apples we picked yesterday) and they need to have a home in the freezer. Out with the old and in with the new!

It has been forever since I have been at my computer! We were in Hawaii for 9 days and coming back to reality has been the hardest thing ever. Wrapping my mind around menu planning today and getting back into a routine has been next to impossible. I shouldn't have given my mind such a break. So here it goes...
Monday: Mom and Dad's---Thank goodness!
Tuesday: Stuffed Peppers, pumpkin muffins
Wednesday: Zucchini Casserole, Garlic Cheese Biscuits, fruit
Thursday: Stuffed Tomatoes, leftover biscuits, fruit
Friday: Pork Chops, zucchini pancakes, applause
Saturday: Garden Veggie Calzones
Sunday: Crock pot something but not sure what....I am open to suggestions if you have any.
Have a great week and I hope your menu planning was easier today than mine was.

I just got back from the most fun weekend. We were in California for Seanna's wedding shower. I got to meet all of her friends and family which was so much fun! The shower was amazing and the food was fabulous. I took lots of pictures which I will share sometime this week. It was a major food weekend and for that reason I am feeling like simple meals this week.
Here is the plan for our week. I hope you had a great weekend!
Dinner
Monday: Mom and Dad's
Tuesday: Pulled Pork, coleslaw, fruit
Wednesday: Zucchini Quiche, fruit, biscuits
Thursday: MY BIRTHDAY!! No cooking for me-a meal out with the family.
Friday, Saturday, Sunday- I am not sure how this weekend will play out. We are going to try to go out just hubby and I for a birthday dinner date, we want to see some friends before we leave for vacation next week, and it is also my brother in-laws birthday so we will probably see him too. If I cook at home my plan is seafood bake and stir fry but I am not confident we will get to either.
Breakfast
Monday: Egg McMuffin (homemade version)
Tuesday: Muffin
Wednesday: Monkey Bar
Thursday: Smoothie
Friday: Cinnamon Roll
And after a very long day of driving that is all I can muster up the energy to plan for our week. Thanks for stopping by!!

We had a wonderful weekend and even got to meet Seanna's parents! My mom made a fabulous dinner for all of us complete with homemade ice cream. The meal was so good I ate way too much!
As for my cooking, it has been very hot the last two days and unbearable in our kitchen without A/C. Tonight we actually had smoothies and popcorn for dinner. I joked with my husband I should blog about it. Everyone would be impressed with my culinary abilities. To make it even less impressive I have to admit I didn't even make the smoothies, they came from McDonald's. We had two coupons for free smoothies that expired today.
This next week it is supposed to cool down so I can actually make real meals. The theme for this week is using stuff up in our freezer. I cleaned the freezer out yesterday and made a list of what needs to be used up.
I wish you a wonderful week full of delicious food!

Tuesday: Fried Rice, fruit, jello
Wednesday: Fair and Rodeo!

I also plan to make Corn Dog Muffins this week to freeze for quick lunches as needed.

Oh how I love summer! I spent the day mostly outside with a friend and then washed the car and read a magazine. Perfect relaxing Sunday!
My hubby is home and his camping trip went well from what I can tell. I am so glad to have him back. I didn't sleep well at all with him gone.
On the plan this week are lots of new things that I have been wanting to try but never get around to. I am hoping I can convince my husband to let us stop at the grocery store on the way home from a family dinner tonight so I will have everything I need on hand without having to shop this week. We will see, he is pretty tired and ready to be home.

Last week I was having a hard time coming up with a menu plan and this week I have so many recipes I want to try that 7 days isn't enough! I think it is because I have actually had some free time this weekend to read magazine and they were full of wonderful ideas. Our garden also produced a great number of zucchini and I hit most of the grocery stores in town yesterday with my mom for all the produce sales. So with a fridge full of fresh ingredients and my mind swirling with ideas here goes my plan.
Dinner
Monday: Mom and Dad's
Tuesday: Fresh Basil Noodles in Garden Fresh Fettuccine, salad, cantaloupe
Wednesday: Corn Chowder, Veggie Focaccia, cantaloupe
Thursday: Turkey Stuffed Peppers, fresh pineapple, salad
Friday: Zucchini Bisque, pineapple, Italian Breadsticks
Saturday: Shredded Beef Nachos, fruit
Sunday: Pulled Pork Sandwiches, coleslaw, fruit, oven fries or tater tots (never got to this last week)
Instead of breakfast this week I am just going to list all the things I want to make if I have time. You will see most of them are sweet :)
Blueberry Muffin Squares
Berry Baked Oatmeal
Blueberry Cinnamon Rolls
Coconut Banana Bread with Lime Glaze
Any chance I am going to have time or stomach space for all of that???

It happens every so often that a menu plan is hard for me to put together. I don't know why I can go so many weeks in a row with all kinds of ideas for my menu and then all of a sudden just loose all inspiration. This was one of those nights. I spent so long trying to decide what sounded good enough to be made for dinner this week.
I have finally put together a plan I think will work. I am also still trying to find the best recipes for my bread machine. Does anyone have a great recipe I should try? The last few loafs I have made the top sinks down so I know I am not a pro yet. I need some experts advise!
Thanks for stopping by and I hope you have a fantastic week!
Dinner
Monday: Mom and Dad's
Tuesday: Light Fettuccine Alfredo, salad, cantaloupe, Italian bread (never go to this last week)

We had such a fun and busy weekend it is hard to get myself in the mindset to be organized for another week. I think that is what summer does to you. I am happy to see that it wont be quite so hot in the coming week. A few of my planned meals for last week had to be scrapped when the weather heated up.
I am excited about menu planning as the garden begins to produce yummy veggies, fruit is all so cheap, and I went blueberry picking. You will notice from my menu plan that our lettuce is ready to be picked and eaten. We will be having a lot of salads this week.
I hope you had a wonderful weekend and are all set to start another great week of summer!

I also want to make a Blueberry Crumb Cake this week. I have a bag or maybe two of frozen blueberries left from last year and I want to get them out before I freeze the new ones I picked on Saturday.
See more menus at I'm An Organizing Junkie.

I am a day late in getting this published but I was having too much fun on the 4th of July to sit at the computer and come up with a menu plan. Also I don't have to work today so yesterday really felt like a Saturday...far too early to make my plan.
This week I am going to try to jump back into using up stuff from the freezer. As our garden gets bigger and bigger I worry I will not have the freezer emptied out in time to fill it back up. I have been trying for several weeks to use up all my pumpkin stash and I still have a few more bags to go. I also have lots of frozen fruits and veggies still. Time for smoothies!
I wish you a great week!!

This week my menu plan is almost non-existent. I am in a wedding on Saturday and between the weeknight events, rehearsal, and wedding itself it doesn't leave many nights I will be home to make dinner. It is also my hubby's birthday on Friday so we will be celebrating on Sunday.
Wish me luck getting through this week. I am going to need it!

We had the most wonderful weather this weekend. The sun finally came out after what feels like months of rain. I even got a little sun burned on my arms! I am just scared that by Tuesday it will all be a distant memory and we will be in rain again.
This week we have a few things that will make for an interesting dinner week. On Wednesday we are having a friend over for dinner, Friday we are hosting a couples wedding shower at our house, Saturday we are going to a graduation party, and Sunday is Father's Day so I am sure that it will be busy. With all that in mind here is what I am thinking for the week but no guarantees it will all play out.
Dinner
Monday: Mom and Dad
Tuesday: Fresh Pasta, Light Alfredo, salad or peas, watermelon
Wednesday: Chicken and Rice Casserole (I am thinking of adapting it for the crock pot. Any idea of what I need to do to make it work??), banana muffins, watermelon, salad. I should probably have a dessert too since we will be having company but we will see.
Thursday: Mexican Flautas, salad, Sweet Corn Tomalito (I have had this on my menu plan twice this month and have never had time to make it. Hopefully this will be my week).
Friday: Shredded Beef Tacos (freezer-this meal has to be quick and easy since we will be getting ready for a party).
Saturday: Graduation Party-If we eat dinner before we go it will be pesto pasta.
Sunday: Father's Day
Breakfast
Monday: Pumpkin Pancakes (these have been on my plan a lot lately because I am using up all the pumpkin in the freezer and we absolutely love them)
Tuesday: Banana Bread
Wednesday: Peanut Butter Granola
Thursday: Oatmeal
Friday: Pumpkin Pancakes
Have a great week!

Where do the weeks go? It seems like I am always sitting down to figure out a menu plan. We had a fantastic weekend spent at the beach. We even got a beautiful day of sunshine on Saturday which was a nice reprieve from the non stop rain we have been having.
At the beach we ate a wonderful meal of prime rib prepared on the Traeger Grill. We also had twice baked potatoes, salad, and corn bread. A prefect meal for our perfect relaxing day. It goes without saying that is was very hard to come home today.
My menu plan last week was 100% successful. That almost never happens so I am happy. I even got to the Crab Casserole I have had on my list for two weeks! I will post the recipe this week since I keep saying I will.
I hope this week is another success in the kitchen and I wish you all the same!!!
Dinner
Monday: Mom and Dad's!!
Tuesday: Slow Cooker Tacos ( I am using beef instead of pork), Mexican Corn Bread or Sweet Corn Tomalito, salad, fruit
Wednesday: Apricot Jalapeno Chicken with Sesame Noodles (recipe to come it is from one of my favorite cookbooks by Robin Miller), salad, fruit
Thursday: Pork Chops, applesauce, green beans, pumpkin dinner rolls
Friday: Something TBD but definitely on the grill because my hubby is dying to grill
Saturday: Turkey and Cheese Burritos, chips, fruit
Sunday: Breakfast for Dinner (probably waffles, eggs, and fruit)
Breakfast
Monday: Baked Peanut Butter Oatmeal
Tuesday: Leftover Baked Peanut Butter Oatmeal
Wednesday: Pumpkin Pancakes
Thursday: Banana Bread
Friday: Kashi Breakfast Bar

This is a great Sunday because there is none of the usual "get ready for the week" stress. We are doing chores around the house and plan to meet my brother, Seanna, and my parents for dinner tonight. I love going out to dinner so I am excited.
If you have been following the blog this week you could see my menu plan from last week was not 100% carried out. I haven't cooked dinner since Thursday night so everything I had planned for the weekend went out the window. I apologize since I had planned to post all the recipes as I made them. I will try to kick it into gear this week :)
I hope everyone is enjoying this holiday weekend. Have a fantastic week!!

It is Sunday night again! I can never believe how fast the weeks go. I had a great weekend but as usual it went too fast. We enjoyed seeing lots of friends this weekend which was very fun. I also hosted a bridal shower for a high school friend. I was looking forward to it but I am glad it is over with because it has been so much work getting ready. I think everyone had fun and some people thought the meal was catered which made me feel good.
Last week I was so tired from the bachelorette party that I never got super organized about my menu planning for the week. That was and always is a mistake. It gave me more motivation to kick it into high gear this week. Almost all of my selections this week are something new to us so check back later and I will link the recipes as I make them.
As usual I hope everyone had a wonderful weekend and I send wishes for a great week!
