I made pumpkin bread from a healthy recipe that only called for egg whites. I couldn't bare to throw away 4 egg yolks so I decided to find a recipe that would use them up. I did a quick search on Allrecipes.com and came up with these little gems.
These were hands down my favorite sugar cookie I have ever made. I should also mention I don't normally like sugar cookies. These were different however- they looked just like store bought and tasted so light. They sort of dissolve the moment they touch your tongue. Amazing! I am going to add them to the Christmas Cookie baking list because I liked them so much.
The sprinkles were not part of the recipe but I got the idea a while back from Cooking During Stolen Moments. I thought it really made the recipe.
If you have egg yolks that need to be used up for any reason this is exactly where they can be put to good use.
On Friday night my husband and I were going to go see Inception but he talked me out of it at the last moment because he thought it would be too scary for me. I have an over active imagination and any type of scary movie always gets to me.
Anyway since we didn't go to the movie I had time to experiment in the kitchen. I had candy bars in the cupboard that I have been wanting to use in something so I thought why not chop them up and stir into cookie dough? I used one of my favorite chocolate chip recipes and divided the batter into fourth.
In the first fourth I chopped up a Twix bar and stirred it in. The cookies turned out delicious with the melted caramel, chocolate, and crunchy pieces. The ones that didn't get wrapped in batter were a little messy but worth it. My husband said these were his favorite.
The next fourth was Crunch Bar. They were much lighter than the Twix version and also very good. The chocolate was soft and creamy and crispy pieces were still light and crunchy.
The third fourth I mixed in M&M's and regular chocolate chips. Who couldn't like those? All perfect and delicious looking. M&M's just make everything better.
The last batch I mixed in.....chocolate chips! I know not very original but after all the mixing and testing I needed a regular cookie to compare them all to. Nothing unique but always delicious.
So after the cookie experiment I think we have a new favorite Twix Cookies! Next time you make a batch of cookie dough try some experiments and see what you think of Twix Cookies.

You can tell what kinds of mood I have been in this week because all of my meals have had the theme of being easy. It was just one of those weeks where I wasn't in the mood to try new stuff and spend my afternoons in the kitchen.
The dessert I thought I had to share was this little concoction. I baked some chocolate chip cookies and when they were still a little warm I scooped softened ice cream in the middle and topped with another cookie. It would have been even fancier rolled in mini chocolate chips or sprinkles but that will have to be next time.
The combination of a warm cookie and cold ice cream was amazing! I want to make these again just thinking of them. YUM!
This is a perfect dessert for company that can really be made ahead. I used cookie dough I had in the freezer and just pulled the ice cream out just before serving. Easy right!?!

Over the weekend I tried yet another chocolate chip cookie recipe in my quest for the most perfect chocolate chip cookie out there. I found this recipe on Cookie Madness called Felix K's Don't Even Try To Say These Aren't The Best You've Ever Eaten, Because They Are Chocolate Chip Cookies. These were really good and the dough was spectacular. It was good enough that we didn't even make our old standby which we normally do when we are unhappy with the experiment batch.
In our last cookie challenge we kept our old favorite as our new favorite after trying two new recipes. After this one I have to say our old favorite might be in jeopardy of loosing it's spot! Now we have three awesome recipes. If you make any of these three please leave a comment and let me know what you think.

I made these cookies last week and took some into my office. Upon the request of one of my co-workers I made another larger batch this week and took them into work. I set them down and within 30 minutes the whole plate was gone and the person who had requested I make them never even got to try one. I felt so bad that I didn't pull one out for her but I had no idea people would eat these so fast! I owe her another batch, maybe next week if the spirit moves me. I had so many requests for the recipe I thought I should share it here.
I always make a half batch of these because the original recipe is so big it doesn't really fit in my Kitchen Aid Mixer. Below is my half batch recipe.
Buffalo Chips (Originally from Hometown Recipes a section of American Profile)
1/2 Cup Margarine
1/2 Cup Shortening
1 Cup Brown Sugar
1 Cup Sugar
2 Eggs
1 Teaspoon Vanilla
1 Cup Quick Oats
2 Cups Flour
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1/2 Cup Coconut
1 Cup Rice Krispies
3 Ounces Chocolate Chips (I always just throw in a few handfuls and call it good)
Preheat oven to 350 degrees. In a large mixing bowl cream margarine and shortening. Add sugars, eggs and vanilla. Mix well. Stir in oats, flour, baking soda and baking powder. When well blended stir in coconut, Rice Kripsies, and chocolate chips. When batter is thoroughly mixes drop on ungreased baking sheet. Bake for 10 to 12 minutes, or until edges are golden.
Right out of the oven they are amazing!

Ultimate Stand Mixer Chocolate Chip Cookie
I am always looking for the best chocolate chip cookie. I can't tell you how many different recipes I have tried only to be totally disappointed. Right now my two favorite are a recipe from Demarle and the other is from All Recipes.com and called Best Chocolate Chip Cookies.
I have been trolling the blogs looking for other chocolate chip cookies with high reviews to challenge my two favorites and I came across two that I wanted to try. The first is the Ultimate Stand Mixer Chocolate Chip Cookie from Cookie Madness. I saw this recipe when she posted it back around Christmas and have been dying to try it. It sounded very different from anything I had ever tried.
The next one I wanted to try was The Chewy from Food Network's Alton Brown. I have seen his cookies episode before and have tried The Puffy for my Dad who loves cake-like cookies. Cakey cookies are not my thing at all so it was a true labor of love. I thought it was interesting to have milk in them and kosher salt.
Both of these new recipes had lots of positive feedback so I was totally into this challenge. I made the Ultimate Stand Mixer dough on Saturday so it could sit in the fridge overnight like instructed. I made The Chewy dough on Sunday afternoon just before we left for a Super Bowl party because it was supposed to chill. The recipe didn't say how long to chill though so I gave them about 3 hours. Of course I also had to make one of my current favorites to test it against so I made the Best Chocolate Chip cookie because it didn't need to chill and at this time I was running out of fridge space.
I started by testing all the dough because if you are like me eating the dough is half the fun. I liked the Best Chocolate Chip cookie dough the best because it was more floury which I like. My second favorite was The Chewy. I also had my friend and fellow judge test the dough and her favorite was the Ultimate Stand Mixer dough followed by the Best Chocolate Chip cookie dough. We agreed to disagree and moved on to baking them.
We made four cookies from each batch and sampled all of them as they came out of the oven. We also did one batch with one of each to see if it made a difference tasting them all together while warm. This did change how they were baked, however, since they all cooked at different temperatures. Both ways yielded the same winner and that was our old standby Best Chocolate Chip cookie. We also really liked the flavor and texture of the Ultimate Stand Mixer but for all the extra effort it took to make them I didn't think it was worth it. We didn't like how dark The Chewy got on the outside while still being so gooey on the inside.
After two days of making dough and all our eating effort, a major sugar rush, and a bit of a stomach ache we are back to where we started. I guess I shouldn't keep trying to mess with perfection.
If you are thinking of making cookies I highly recommend the Demarle recipe and the Best Chocolate Chip cookie recipe. You will not be disappointed!

A while ago I posted a picture of the best chocolate chip cookies and then never had time to post the recipe. So today is your lucky day because I am ready to share. I got this recipe from my mother in law who sells Demarle cookware. It is in the Demarle 2009 Catalog that I was flipping through with her in September. She said it was the best ever and with those words it was on my list of things to make as soon as possible! In this recipie butter is key-do not use margarine! The dough is dry but somehow they turn out amazing! You should print this recipie right now and go give these a try.
Marlene Cain's Famous Chocolate Chip Cookies
2 1/4 Cups all purpose flour
1 Teaspoon baking soda
1/2 Teaspoon salt
1/2 Cup butter at room temperature
1/2 Cup butter flavored Crisco
1/2 Cup white sugar
3/4 Cup light brown sugar
1 Egg
2 Teaspoons vanilla
1 12 ounce bag semi-sweet chocoalte chips
In a small bowl, combine flour, baking soda, and salt and set aside. In a mixing bowl combine butter, butter flavored Crisco, white sugar, and brown sugar on high until well-blended. Add egg and vanilla and mix unitl blended. Add flour mixture and mix on low speed just until dry ingredients are incorporated. It may be necessary for you to mix by hand. Do not over beat. Dough should not be overly creamy, it should have some texture. Add chocoalte chips. Wrap in plastic and chill the dough for at least 2 hours or overnight.
Preheat oven to 325 degrees. Make large golf-ball sized balls and place on cookie sheet lined with a Silpat or parchment paper. Bake for 20-25 minutes, or until edges of cookie just begin to brown. Time will vary depending on your oven and the size of the cookie.
