Ravioli With Arugula and Pecorino Romano or Parmesan Cheese

Tonight I made a new recipe for my little family - me, my husband, and our cat who was looking at me and so I let him smell it. Needless to say, he did not like it. Should I be offended? : ) Anyways, I was looking through recipes online and found this recipe on Eating Well. I think I made too much dressing because the arugula was a little soggy. It is a fun and interesting idea to have arugula in your pasta so I might try this again. It definitely helped us reach our veggie count for the day. Overall, I am not sure about this recipe but the reviews are great on the Eating Well website. My final suggestion would be to add bacon or walnuts. That would make this dish much better. Veggie Pizza!

Last night for dinner we worked as a team and made a great pizza. We bought premade dough, marinara sauce, and mozzarella cheese and only had to chop tomatoes, green bell peppers, onions, and garlic. The pizza cooked in about 10 minutes and it was ready to eat. This was a great meal to have on a weekday because of the light prep work involved. I also loved that we got a full serving of veggies from this pizza. Perhaps next time I will go one step further and make the dough! Sheena tried a link to a great dough recipe in a previous post. Monday Night Veggies

Let me start out by telling you a funny story about my trip to the grocery store today. I usually go to a big chain store but today I was found myself next to a health food store so I decided to do my shopping there. As I was in the produce aisle I heard some music and out walked a person playing the trumpet, another person playing the accordion and harmonica, and lastly a person with some cymbals?!? I am still not sure what to think about all this and they continued to do loops around the store for the duration of my shopping. Needless to say, it was very interesting but fun. Perhaps I will have to go back next Monday to see if this is normal.


Now on to the food! Since the health food store had so many colorful vegetables I turned the entire meal into a veggie night. First I made a guacamole dip with avocado, tomato, green onions, cilantro, and garlic (served with chips of course!). For the main meal we had burritos with red and yellow peppers, onions, mexican rice, cheese, and sour cream. For the side we had a green salad with ranch. I know I like to make a lot of recipes but sometimes there is something so refreshing in just mixing simple ingredients together. It was very needed.

I am so excited to continue on with my food for the week. Next to come for me are greek pitas, shrimp pasta, and beef stroganoff. Also, check out Sheena's Menu Plan Monday for more yummy meals...

Pasta Creations!

Sheena has been posting so much on here while I have been...oh so busy! Side note, if anyone visits the site and it doesn't quite look right, it is because I am doing a little behind the scenes work on our page. So please ignore it, the content will still be up and running. I am trying to find a new template for us. Anyways, today, I'm back at the cooking!

So whenever I am hungry but don't feel like really cooking I always end up making some sort of pasta. I saute a few cloves of garlic with olive oil for a couple minutes. Then I add red pepper flakes because I like a little bit of spice. And finally I mix in the pasta (today it was penne pasta) and add a little chopped basil on top. Sometimes, if I have it, I add a little lemon and Parmesan cheese shavings. What I have learned the most is that pasta can be great even without sauce!

I was wondering if there are any actual recipes that are out there like my little creation. So far, this link with Food Network is what I found. I know a lot of people like to stick to the recipes, but with pasta, almost anything goes. Have fun! If you are feeling really adventurous, add some leftovers. It's always a good time. What are some of your own pasta creations? I would love to hear them!!


Roasted Garlic

This is an old family staple when I was growing up. I am actually surprised how many people don't know about this one. Its so easy and always seems to make any dish look super fancy.
Ingredients
Garlic
Crackers
Olive oil
Foil
Directions
Preheat oven to 350-400 degrees. I usually just end up doing whatever temperature my other food is being cooked at. Its not really an exact number necessary type of dish.
Next, take your foil and make a little bowl with it by folding up the edges. Add a little bit of olive oil to make a thin layer on the bottom. Cut your garlic so that 1/3 of the top is exposed. Place the open garlic side upside down in the oil. Wrap the foil over the garlic to make a seal. Bake for about 40-60 minutes depending on your temperature, until the garlic is soft. Check by sticking a knife into one of the cloves. To serve, place a small butter knife beside the garlic and let your guests pull out each clove and spread on a cracker.
