I made this semi-simple dessert when we had company over recently. They all were impressed when they saw it on the counter and couldn't wait to try it. I thought it almost looked like a slab pie. Everyone talked about how much they liked it but the best compliment came from my husband when he declared it his new favorite dessert. WOW!! That is something I will be making again.
Originally I had this at my Grandma's house one afternoon when I stopped by and she had it sitting on the counter. I decided to make it because I had cornflakes that need to be used up. I got the recipe from Grandma but I have also seen it other place such as Family Fun magazine.
Apple Strudel
Crust
1 Tablespoon Sugar
2 1/2 Cups Flour
1 Teaspoon Salt
1 Cup Shortening
Cut shortening into dry ingredients. Blend 1 egg in cup and fill to 2/3 cup with milk. Beat and pour over dough. Roll out half of dough on rimmed cookie sheet.
Filling: Place 3 handfuls of cornflakes on top of dough. Sprinkle with 3-4 apples cut in pie slices. Sprinkle 1 cup of sugar over top and follow with cinnamon. Use as much or as little cinnamon as you like.
Roll other half of the dough and place on top. Beat an egg white and brush over top of crust. Bake at 350 degrees for 1 hour.
Enjoy with ice cream!
Tonight for dinner was curried chicken salad with a side of cornbread. This was a new recipe for me from a cookbook called Panini written by Melanie Bernard. You were supposed to put the chicken salad in between cornbread pieces to make a panini but that didn't work out so well. We just ended up putting the chicken salad on lettuce and having corn bread on the side. Overall, it was nice but it would be better for lunch if left on lettuce. Mix all the following ingredients together.
1/4 cup walnut halves
1/3 cup mayonnaise
1 tablespoon dijan mustard
1 teaspoon fresh lemon juice
1/4 teaspoon curry powder
1 cup cooked chicken breast
3 tablespoons chopped red onions
1/4 cup unpeeled Granny Smith apple
salt and pepper
I didn't add the 2 tablespoons of raisins, 2 tablespoons of coarsely chopped celery, 1 tablespoon fresh chopped mint that the recipe suggested.
This will be nice and light for going into summer.

My fiance and I made up this treat one night when we didn't have anything for our sweet cravings. It is a simple take on a peach cobbler with vanilla ice cream, peaches (frozen, fresh, or canned), and cinnamon. Other times we use granola instead of ice cream if you want to be a little healthier. If you want to be really bad, we have made this with apples fried in butter instead of peaches. Any way you go, you can't go wrong! It is just that yummy!!
PS if you want to use the Green Apple Chipotle Salsa in other recipes it would be great as well. Same goes for the spice mix. I am sure it would be good on almost any meat.
I was sitting around the other night and wanted something sweet to finish off the night. I looked in my kitchen and had nothing so the next thing I always do is check Super Cook for ideas. If you have never checked out this website you must do it asap! It is the best way to make something yummy when you think you have nothing. I ended up finding a recipe for a fried apples type dessert. I wasn't expecting much but gave it a try.
2 apples, pared,cored,sliced thin
1 tablespoon freshly squeezed lemon juice
1 tablespoon butter
1 tablespoon honey
A pinch of cinnamon and sugar to taste
(Vanilla ice cream)
Directions
In a bowl, combine apple slices and lemon juice; toss gently but well.
In a skillet, melt butter over medium-high heat and add apples, any lemon juice in the bowl, and honey.
Cook for 2 or 3 minutes, stirring gently, until apples are glazed, and tender.
Scoop into a bowl and add your cinnamon and sugar.
Serve immediately.
(While eating I decided this would be AMAZING over vanilla ice cream. Next time...)
We were at a fun Halloween party today and I had to take a couple photos of the food to share with everyone. The thing I was most impressed by was the fresh apple cider they served. We watched as they loaded huge buckets of gorgeous red apples into a cider press and went to work. After some manual labor there were gallons of fresh cider for everyone to enjoy. Fall was in the air!
